Baked Cottage Cheese Eggs

A delicious, protein-packed breakfast featuring creamy cottage cheese and eggs, baked to perfection with fresh vegetables.

  • 1 cup cottage cheese
  • 4 large eggs
  • 1 cup mixed chopped vegetables (bell peppers, spinach, tomatoes)
  • 1/2 cup shredded cheese (cheddar or mozzarella)
  • Salt and pepper (to taste)
  • Optional herbs or spices (garlic powder, paprika, or fresh herbs)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a medium mixing bowl, combine the cottage cheese, eggs, and salt and pepper, and whisk until creamy.
  3. Fold in the chopped vegetables and half of the shredded cheese.
  4. Pour the mixture into an oven-safe dish and spread evenly.
  5. Top with the remaining shredded cheese.
  6. Bake for 25-30 minutes, until the edges are golden and the center is set.
  7. Let cool for a few minutes, slice into squares, serve warm, and enjoy!

Notes

Store leftovers in an airtight container in the fridge for up to three days. Reheat in the oven for the best texture.
