Baked Feta Eggs with Tomatoes and Spinach

A delightful Mediterranean-inspired dish featuring baked eggs with creamy feta, roasted tomatoes, and fresh spinach. Perfect for brunch or a light dinner.

  • 1 cup cherry tomatoes
  • 1 cup fresh spinach
  • 4 large eggs
  • 1 block of feta cheese
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh herbs or crushed red pepper for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Drizzle one tablespoon of olive oil in a medium baking dish and add cherry tomatoes.
  3. Layer the fresh spinach on top of the tomatoes.
  4. Crumble the block of feta cheese over the tomatoes and spinach.
  5. Create four small wells and crack an egg into each.
  6. Drizzle remaining olive oil over the eggs and season with salt and pepper.
  7. Bake for 20-25 minutes or until the eggs are set to your liking.

Notes

Serve with crusty bread to soak up the delicious juices. Leftovers can be stored for up to 3 days.
