Blueberry Cottage Cheese Breakfast Bake

A nutritious and delicious breakfast bake featuring creamy cottage cheese and fresh blueberries, perfect for busy mornings or brunch gatherings.

  • 2 cups cottage cheese
  • 3 eggs, beaten
  • 2 tablespoons honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1 cup rolled oats
  • 1 cup fresh blueberries (or frozen)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, combine cottage cheese and beaten eggs, whisking until well blended.
  3. Stir in honey (or maple syrup) and vanilla extract.
  4. In another bowl, mix rolled oats and blueberries, then gently fold into the cottage cheese mixture.
  5. Pour the mixture into a greased 9×9-inch baking dish and spread evenly.
  6. Bake for 35-40 minutes or until the edges are golden brown and a toothpick comes out clean.
  7. Cool for a few minutes before serving warm, optionally topped with yogurt or powdered sugar.

Notes

Leftovers can be stored in an airtight container for up to 4 days or frozen for up to 3 months. Reheat in the oven or microwave when ready to enjoy.
