  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon orange or lemon zest
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 cup mini chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a mixing bowl, cream together softened butter and granulated sugar until light and fluffy (about 3-4 minutes).
  3. Add ricotta cheese, egg, vanilla extract, and citrus zest; mix well until combined.
  4. In a separate bowl, whisk together flour and baking powder; gradually add to the wet mixture.
  5. Gently fold in mini chocolate chips.
  6. Drop rounded tablespoons of dough onto a baking sheet, about 2 inches apart.
  7. Bake for 12-15 minutes, until edges are lightly golden and centers are set.
