Chicken Avocado Melt Sandwich

A delightful sandwich featuring tender chicken, creamy avocado, and melty cheese, all nestled between perfectly toasted bread.

  • 2 cooked chicken breasts, shredded or cubed
  • 1 ripe avocado, mashed
  • 1 cup cheddar or mozzarella cheese, shredded
  • 4 slices of your choice of bread (sourdough or multigrain)
  • Salt and pepper, to taste
  • Optional: garlic powder or paprika
  • Butter or olive oil, for toasting

Instructions

  1. Season the chicken with salt, pepper, and garlic powder. Cook in a skillet over medium heat until golden and no longer pink, about 6-7 minutes per side. Shred or cube it.
  2. In a small bowl, mash the ripe avocado with salt and pepper until creamy.
  3. Heat a skillet or griddle over medium heat and butter one side of each piece of bread.
  4. On the unbuttered side, layer the chicken, mashed avocado, and generous cheese. Top with another slice of bread, buttered side out.
  5. Cook the sandwich in the skillet for about 3-4 minutes until golden brown, then flip and cook the other side for an additional 3-4 minutes.
  6. Once the cheese is melted and the bread is toasted, remove from skillet and slice in half to serve.

Notes

Feel free to experiment with different types of bread and cheese. Leftover chicken can also be used for convenience.
