Classic Pink Strawberry Gelatin

A light and refreshing dessert made primarily from strawberry puree and gelatin, perfect for satisfying sweet cravings without the guilt.

  • 2 cups fresh strawberries (or frozen, thawed and drained)
  • 2 packets (about 4 teaspoons) gelatin
  • 24 tablespoons sugar (or substitute with honey, maple syrup, or sugar-free alternative)
  • 1 cup water
  • 1/4 cup cold water (for blooming gelatin)

Instructions

  1. Prepare the Strawberries: Wash and hull the strawberries, then puree them until smooth.
  2. Heat the Mixture: Combine the strawberry puree with 1 cup of water and 2-4 tablespoons of sugar in a saucepan over medium heat. Stir until warm and sugar dissolves.
  3. Dissolve the Gelatin: Sprinkle gelatin over 1/4 cup of cold water in a separate bowl and let sit for 5 minutes.
  4. Combine: Add the bloomed gelatin to the warm strawberry mixture and stir until completely dissolved.
  5. Cool and Set: Pour the mixture into a mold and refrigerate for at least 3 hours or until set.
  6. Serve: Once set, remove from the mold and serve plain or with whipped cream.

Notes

For a firmer texture, increase the gelatin by half a packet. This dessert can be prepped ahead of time and stored in the refrigerator for up to a week.
