Coffee Cake Muffins

Delightful muffins with a tender crumb and crumbly topping, perfect for breakfast or as a sweet treat.

Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tablespoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ½ teaspoon salt
  • 2 large eggs
  • 1 cup buttermilk
  • ½ cup unsalted butter (melted)
  • 1 teaspoon vanilla extract
  • For the topping: ½ cup flour
  • ½ cup brown sugar
  • 1 teaspoon cinnamon
  • ¼ cup cold butter, cubed

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Line a muffin tin with paper liners or spray it with cooking spray.
  3. In a large mixing bowl, whisk together the dry ingredients: flour, sugar, baking powder, baking soda, cinnamon, and salt.
  4. In a separate bowl, beat the eggs and whisk in the buttermilk, melted butter, and vanilla extract.
  5. Pour the wet ingredients into the dry ingredients and stir gently until just combined.
  6. For the topping, mix together the flour, brown sugar, and cinnamon in another bowl and cut in the cold butter until it resembles coarse crumbs.
  7. Spoon the batter into the muffin tins, filling them about ¾ full, and sprinkle the topping on each muffin.
  8. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.

Notes

Store leftover muffins in an airtight container at room temperature for up to three days or in the fridge for up to a week.
