Crack Breakfast Casserole

A cozy and satisfying breakfast casserole filled with layers of fluffy eggs, savory sausage, and melted cheese that is perfect for family gatherings or meal prep.

  • 10 large eggs
  • 1 pound breakfast sausage
  • 2 cups shredded cheese (cheddar or your choice)
  • 68 slices bread, cubed (sourdough or whole wheat)
  • 1 cup milk
  • 1 cup bell peppers, diced
  • 1 cup onions, diced
  • Salt and pepper, to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet over medium heat, brown the chopped sausage until fully cooked, about 7-10 minutes. Drain excess grease and set aside.
  3. In the same skillet, sauté the diced bell peppers and onions for about 3-4 minutes until soft.
  4. In a large mixing bowl, whisk together the eggs, milk, salt, and pepper until combined.
  5. In a greased 9×13 inch baking dish, layer the bread cubes at the bottom, followed by the sausage and sautéed veggies. Pour the egg mixture over everything and sprinkle cheese on top.
  6. Bake in the preheated oven for 30-35 minutes until the cheese is bubbly and the top is golden brown.
  7. Let it rest for 5-10 minutes before slicing.

Notes

This casserole can be stored in the fridge for about 3-4 days. It can also be frozen for 1-2 months.
