Creamy Tomato Garlic Pasta

A delightful and comforting dish featuring creamy sauce, sweet tomatoes, and roasted garlic, perfect for family dinners or gatherings.

Ingredients

  • Pasta (8 ounces, your choice of spaghetti, penne, or fusilli)
  • Olive oil (1 tablespoon)
  • Garlic (4 cloves, minced)
  • Canned crushed tomatoes (one 14-ounce can)
  • Heavy cream (½ cup)
  • Fresh basil (¼ cup, chopped)
  • Salt and pepper (to taste)

Instructions

  1. In a large pot, bring salted water to a boil. Add your pasta and cook according to package instructions until al dente. Once cooked, reserve about ½ cup of pasta water before draining.
  2. In a skillet over medium heat, add olive oil. Once hot, toss in the minced garlic, cooking until fragrant and golden, about 2 minutes.
  3. Stir in the canned crushed tomatoes to the skillet with the garlic. Bring the mixture to a gentle simmer, allowing the tomatoes to break down slightly, about 5 minutes.
  4. Pour in the heavy cream, stirring continuously to combine. If it’s too thick, add reserved pasta water until reaching your desired consistency.
  5. Add your cooked pasta directly to the sauce, tossing to ensure every strand is well-coated.
  6. Taste the pasta and add salt and pepper as needed. If desired, sprinkle in half of the fresh basil and mix well.
  7. Dish out the pasta onto plates, garnishing with the remaining basil.
