Ingredients

  • Breakfast Sausage
  • Eggs
  • Flour Tortillas
  • Shredded Cheese (cheddar, Monterey Jack, or pepper jack)
  • Vegetables (optional, such as bell peppers, onions, or spinach)

Instructions

  1. In a skillet over medium heat, crumble the breakfast sausage and cook until browned, about 5-7 minutes. Drain any excess grease.
  2. Whisk the eggs in a bowl, season lightly with salt and pepper, then pour over the cooked sausage and stir until fluffy, about 2-3 minutes.
  3. Warm the tortillas in a separate pan for about 30 seconds on each side.
  4. Spread a scoop of the sausage and egg mixture on each tortilla and sprinkle with shredded cheese.
  5. Roll up the tortilla, tucking in the sides.
  6. Return the roll-ups seam side down to the skillet and toast on medium heat for about 2-3 minutes per side until crispy and golden brown.
