Easy and Flavorful Korean BBQ Steak Rice Bowls

A delightful weeknight dinner of juicy beef marinated in a savory blend of soy sauce, sesame oil, and garlic, served over rice with colorful vegetables.

  • 1/4 cup soy sauce
  • 2 tbsp sesame oil
  • 1 tbsp brown sugar
  • 3 cloves garlic, minced
  • 1 tsp grated ginger
  • 2 cups cooked rice
  • 1 cup mixed vegetables (bell peppers, carrots, broccoli)
  • Green onions and sesame seeds, for garnish

Instructions

  1. Marinate the steak: In a mixing bowl, combine soy sauce, sesame oil, brown sugar, minced garlic, and grated ginger. Add the flank steak, ensuring it’s well coated. Cover and marinate in the refrigerator for at least 15 minutes (or up to overnight for maximum flavor).
  2. Prepare rice: While the steak marinates, cook rice according to package instructions.
  3. Cook the steak: Preheat a skillet or grill pan over medium-high heat. Place the marinated steak on the pan and cook for about 3-4 minutes on each side for medium-rare. Remove from heat and let it rest.
  4. Sauté vegetables: In the same skillet, add a splash of oil and toss in your chosen vegetables. Cook for about 5-7 minutes.
  5. Slice the steak: Thinly slice the steak against the grain.
  6. Assemble the bowls: In each bowl, create a fluffy bed of rice, topped with sautéed vegetables and slices of steak.
  7. Garnish and serve: Finish with sliced green onions and a sprinkle of sesame seeds.
