Fluffy Japanese Soufflé Pancakes

  • 2 tablespoons sugar
  • 1/2 teaspoon vanilla extract

  • 2 tablespoons milk

Instructions

  1. Carefully separate the egg whites from the yolks into two different bowls.
  2. In the bowl with the yolks, whisk in sugar, vanilla, milk, and flour until just combined.
  3. Use a hand mixer or whisk to beat the egg whites until they form stiff peaks.
  4. Gently fold one-third of the whipped egg whites into the yolk mixture, then fold in the rest.
  5. Heat a non-stick frying pan over low heat and lightly grease it with oil.
  6. Pour the batter to form 2-3 pancakes, cover, and cook for about 4-5 minutes until bubbly on the edges.
  7. Flip the pancakes carefully and cook for another 4-5 minutes until golden brown.
  8. Serve immediately with your favorite toppings.

Notes

Use room-temperature eggs for better aeration and maintain the fluffiness while folding the mixtures.
