French Onion Chicken Orzo Casserole

A comforting casserole featuring succulent chicken, tender orzo, and caramelized onions enveloped in a rich broth and topped with melted Swiss cheese.

  • 1 pound chicken breast, diced
  • 1 cup uncooked orzo pasta
  • 4 large onions, thinly sliced
  • 3 cups chicken broth
  • 1 cup shredded Swiss cheese
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, heat the olive oil over medium heat. Add the thinly sliced onions and a pinch of salt. Sauté for about 15 minutes, stirring occasionally, until the onions are golden and caramelized.
  3. In a large mixing bowl, combine the diced chicken, uncooked orzo, and caramelized onions. Pour in the chicken broth, and stir to ensure everything is evenly coated.
  4. Transfer the mixture to a greased 9×13 inch baking dish. Spread it out evenly.
  5. Cover the dish with aluminum foil and bake in the preheated oven for 30 minutes.
  6. Remove the foil, sprinkle Swiss cheese on top, and bake for an additional 15 minutes, or until the cheese is bubbly and slightly golden.
  7. Let it cool for a few minutes before serving.

Notes

For a different flavor profile, try incorporating sautéed mushrooms or roasted veggies.
