Gnome Mini Cheesecakes

Delightful mini cheesecakes with a creamy filling and graham cracker crust, topped with whimsical gnome decorations.

  • 8 oz cream cheese
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1 cup crushed graham crackers
  • 1/4 cup melted butter
  • Toppings of your choice (whipped cream, fruit, gnome decorations)

Instructions

  1. Prepare the crust by combining the crushed graham crackers and melted butter in a bowl until coated.
  2. Evenly distribute the crust mixture into a lined muffin tin, pressing down to form an even layer.
  3. In a large bowl, beat the cream cheese until smooth, then gradually add the sugar and mix in vanilla.
  4. Add the eggs one at a time, blending well after each addition until smooth.
  5. Pour the filling over the crusts, filling each cup about three-quarters full.
  6. Preheat the air fryer to 300°F (150°C) and arrange the muffin tin inside. Cook for 15-20 minutes until slightly jiggly in the center.
  7. Cool for 30 minutes and refrigerate for at least 2 hours before decorating with toppings.

Notes

These cheesecakes can be frozen for up to 3 months. To serve, thaw overnight in the refrigerator.
