Honey BBQ Chicken Rice

A delicious combination of sweet and smoky flavors with tender chicken simmered in honey BBQ sauce served over fluffy rice.

  • 2 lbs chicken thighs or breasts
  • 1 cup honey
  • 1 cup BBQ sauce
  • 2 cups cooked rice
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Season the chicken thighs or breasts lightly with salt, pepper, and garlic powder.
  2. In a large skillet, heat oil over medium heat and sauté chicken for 5-7 minutes on each side until golden brown and cooked through.
  3. Pour honey and BBQ sauce over the cooked chicken, ensuring it’s well coated.
  4. Reduce heat to low and let the chicken simmer in the sauce for 10-15 minutes.
  5. Prepare rice according to package instructions.
  6. Chop or shred the chicken into bite-sized pieces and serve over the prepared rice. Drizzle with additional BBQ sauce if desired.
  7. Garnish with a sprinkle of chopped parsley or green onions.

Notes

For a spicy twist, add red pepper flakes to the BBQ sauce. Store leftovers in an airtight container for up to three days.
