Ingredients

  • 1 packet of sugar-free gelatin
  • 1 cup of water (boiling)
  • 1 cup of cold water
  • 2 cups of whole-wheat flour
  • 1 cup of natural sweeteners (honey or maple syrup)
  • 1 cup of Greek yogurt
  • 2 eggs
  • Mixed greens (for salad)
  • Diced vegetables (for salad)
  • Choice of fruits (for salad)
  • Herbs (for dressing)

Instructions

  1. Boil 1 cup of water and dissolve the sugar-free gelatin, then stir in 1 cup of cold water. Pour into shot glasses and refrigerate for at least 2 hours.
  2. Mix whole-wheat flour, natural sweetener, Greek yogurt, and eggs in a bowl. Transfer to a greased baking pan and bake at 350°F for 25-30 minutes.
  3. Once the cake is baked, allow it to cool for 10-15 minutes.
  4. In a large bowl, combine mixed greens, diced vegetables, and fruits. Drizzle with Greek yogurt dressing.
  5. Serve the jello shots, slice the cake, and toss the salad.
  6. Store any uneaten jello shots and cake in the fridge and keep salad in an airtight container.
