Juicy French Onion Pot Roast

A comforting and flavorful pot roast made with tender beef, caramelized onions, and savory herbs, perfect for family dinners or gatherings.

  • 34 lbs beef chuck roast
  • 3 large onions, sliced
  • 4 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 2 teaspoons garlic powder
  • Salt and pepper, to taste
  • Fresh thyme or rosemary (optional)

Instructions

  1. Pat the beef chuck roast dry with paper towels and season generously with salt and pepper on all sides.
  2. In a large skillet over medium-high heat, sear the roast for about 3-4 minutes on each side until browned (optional).
  3. In your slow cooker or pot, layer the sliced onions as the base.
  4. Place the seared chuck roast on top of the onions and pour in the beef broth, ensuring the meat is mostly submerged.
  5. Add Worcestershire sauce, garlic powder, and any herbs you’re using.
  6. Cover and cook on low for 4-5 hours in a slow cooker or in an oven at 300°F (150°C) for about 3-4 hours.
  7. Check for tenderness about 30 minutes before the cooking time is up.
  8. Once done, let the pot roast rest for about 10 minutes before slicing and serving with the caramelized onions and broth.
