Slow Cooker Lemon Herb Chicken with Fluffy Rice

A delicious and easy to prepare slow-cooked chicken dish infused with zesty lemon and fresh herbs, served over fluffy rice.

  • 4 boneless, skinless chicken thighs
  • 2 lemons (juiced and zested)
  • 3 cloves garlic (minced)
  • 1 cup fresh herbs (parsley, thyme, or rosemary)
  • 1 cup chicken broth
  • 1 cup long-grain rice
  • Salt and pepper to taste

Instructions

  1. Rinse chicken thighs under cold water and pat dry.
  2. Place chicken in slow cooker and sprinkle with salt, pepper, garlic, and herbs. Drizzle with lemon juice and zest.
  3. Pour chicken broth over the chicken, ensuring coverage.
  4. Cover and cook on low for 6-8 hours or high for 3-4 hours, until chicken shreds easily.
  5. About 30 minutes before serving, prepare rice by boiling 2 cups of water in a pot, adding 1 cup rice, and simmering for 15 minutes.
  6. Shred chicken in the slow cooker and serve over rice, drizzled with sauce.
