Spanish Churro-Inspired Pancakes

Fluffy pancakes infused with cinnamon and sugar, reminiscent of churros, perfect for breakfast or brunch.

Ingredients

  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1 cup milk (or dairy-free alternative)
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 tablespoons melted butter or oil

Instructions

  1. In a mixing bowl, whisk together flour, sugar, baking powder, cinnamon, and salt until well combined.
  2. In another bowl, whisk together milk, egg, melted butter, and vanilla extract.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined; batter may be slightly lumpy.
  4. Preheat skillet over medium heat, greasing lightly.
  5. Ladle about 1/4 cup of batter onto the skillet and cook until bubbles form, about 2-3 minutes. Flip and cook for an additional 1-2 minutes until golden brown.
  6. Keep cooked pancakes warm while finishing the remaining batter.
  7. Stack pancakes, sprinkle with cinnamon sugar, and serve with melted chocolate sauce for dipping.

Notes

For a healthier version, use whole wheat flour and feel free to add chocolate chips or nuts. Store leftovers in an airtight container.
