Sweet and Spicy Cinnamon Sugar Blondies

  • 1 cup (2 sticks) unsalted butter
  • 1 ¾ cups brown sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 2 teaspoons ground cinnamon
  • ¼ teaspoon cayenne pepper (optional)
  • ¼ cup sugar mixed with 1 teaspoon cinnamon (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Melt the butter in a medium mixing bowl and allow it to cool slightly.
  3. Add the brown sugar, eggs, and vanilla extract to the melted butter; whisk until smooth.
  4. Sift together the flour, baking powder, salt, and cinnamon in a separate bowl.
  5. Fold the dry mixture into the wet ingredients until just combined.
  6. Pour the batter into a greased or lined 9×13-inch baking pan and sprinkle the cinnamon sugar on top.
  7. Bake for 25-30 minutes or until lightly golden and a toothpick inserted comes out clean.
  8. Allow to cool for 10 minutes, then transfer to a wire rack and cut into squares.

Notes

Customize with nuts or chocolate chips for added flavor. Store in an airtight container for up to 3 days.
