  • 1 cup cold water
  • 1 cup hot water or brewed tea
  • Low-calorie sweetener or honey, to taste
  • 12 tablespoons fresh lemon or fruit juice (optional)
  • Pinch of salt (optional)
  • Optional add-ins: fresh herbs, vanilla extract, small fruit pieces

Instructions

  1. Measure and bloom: Sprinkle gelatin over cold water and let sit for 2 to 5 minutes.
  2. Dissolve in hot liquid: Heat water or tea and pour over bloomed gelatin; stir until dissolved.
  3. Add flavor and sweetener: Stir in lemon juice or sweetener, tasting as needed.
  4. Pour into molds or dish: Transfer the mixture into a glass container or silicone molds.
  5. Chill to set: Refrigerate uncovered for 1 to 3 hours until firm, depending on thickness preference.
  6. Cut and serve: For dishes, slice into cubes; if in molds, pop them out with warm water.
  7. Store leftovers: Keep in airtight container in the fridge for up to 5 days.
