The Ultimate Pesto Grilled Cheese

A delightful twist on the classic grilled cheese, featuring rich pesto with creamy cheese for a flavorful, comforting sandwich.

  • 2 slices hearty bread (sourdough or whole grain)
  • 1 cup shredded cheese (mozzarella or fontina)
  • 2 tablespoons pesto (fresh or store-bought)
  • 1 tablespoon butter (softened)

Instructions

  1. Spread a thin layer of butter on one side of each slice of bread.
  2. On the non-buttered side of one slice, spread the pesto evenly and sprinkle the shredded cheese over it.
  3. Place the other slice of bread on top, buttered side up.
  4. Preheat a non-stick skillet over medium heat.
  5. Grill the sandwich for 4-5 minutes on one side until golden brown.
  6. Carefully flip the sandwich, pressing down slightly, and cook for another 3-4 minutes until the other side is golden and cheese is melted.
  7. Check for doneness and remove from heat if cheese is melty.
  8. Let it rest for a minute, then slice and serve.
